Tuscan Asparagus

We may not be able to be under the sun in Tuscany, but we can enjoy the flavors under the same sun. Simple and fresh always equals delectable.

Ingredients
  

  • 1-1 ½ lbs fresh asparagus trimmed, (680 g)
  • 1-1 ½ cups grape tomatoes halved (241 g)
  • 3 tbsp pine nuts (24 g)
  • 3 tbsp olive oil (44 ml)
  • 2 garlic cloves minced
  • 1 tbsp lemon juice (15 ml)
  • cup Parmesan cheese grated (59 g)
  • 1 tsp lemon zest (3 g)

Instructions
 

  • Place the asparagus, tomatoes, and pine nuts in roaster.
    1-1 ½ lbs fresh asparagus, 1-1 ½ cups grape tomatoes, 3 tbsp pine nuts
  • Mix olive oil, lemon juice, and garlic, and drizzle over asparagus.
    3 tbsp olive oil, 1 tbsp lemon juice, 2 garlic cloves
  • Cover & cook 20 - 30 minutes until asparagus is just tender.
  • Plate and sprinkle on zest of lemon and cheese.
    ⅓ cup Parmesan cheese, 1 tsp lemon zest
