Cook time: 6+ hrs
The flavors of beef and stout together are fabulous! Make sure you have some hearty bread on hand to soak up every drop.
- 2 lbs (914 g.) stew meat, cubed
- 1 yellow onions, chopped
- 2 cloves garlic, crushed
- 6 oz (170g) tomato paste
- 1 1/2 cup (353 ml.) Irish stout beer, such as Guinness®
- 4 sprigs fresh thyme
- 2 large potatoes, cubed
- 2 carrots, chopped
- 2 tablespoons (29 g.) fresh flat leaf parsley, chopped
- Combine all the ingredients in the metal roaster. Cover and cook for 6+ hours or until meat and vegetables are tender. Serve and garnish with a little parsley.
