Ingredients
  

  • 1 lb boneless skinless chicken breasts, chicken thighs, or a mix (454g)
  • 1 (14 ½ oz can diced tomatoes (411g)
  • 1 cup low-sodium chicken broth (237g)
  • 2 tsp chili powder (10g)
  • 2 tsp salt (10g)
  • ½ tsp ground cumin (2.5g)
  • 1 (15 oz) can pinto or black beans, drained, rinsed (425g)
  • 1 cup uncooked white or brown rice (211g)
  • 1 cup frozen corn (211g)
  • sour cream, shredded cheese, avocado, chopped cilantro, or salsa for garnish
  • 1 pkg tortillas

Instructions
 

  • Mix ingredients in roaster
    1 lb boneless skinless chicken breasts, chicken thighs, or a mix, 1 (14 ½ oz can diced tomatoes, 1 cup low-sodium chicken broth, 2 tsp chili powder, 2 tsp salt, ½ tsp ground cumin, 1 (15 oz) can pinto or black beans, drained, rinsed, 1 cup uncooked white or brown rice, 1 cup frozen corn
  • Cover and cook until rice is tender
  • Wrap in flour tortillas, garnish and serve.
    1 pkg tortillas, sour cream, shredded cheese, avocado, chopped cilantro, or salsa
